20 Dinner Ideas for Your Next Meal Planning Slump

Do you ever get in a rut with dinner ideas and have no idea what to cook? Do you make a new recipe every night and get burned out with meal planning? Do veggies go to waste in your fridge because you’re too tired to cook after a long day? Well, in 6 years of marriage, Josh and I have been there too. That’s why as part of our 2022 Goals we decided to keep track of the dinners we tried and make note of the ones we enjoyed. Our goal was to come up with a list of 20 meals we could cycle through each month. Below is our list, some are recipes out of cookbooks and some are things I just throw together. I will try to find links online for those that I can but I’ll be sure to link the cookbooks that I use as well! I hope this helps you next time you’re in need of a yummy dinner idea. 1. Cilantro Lime Burst Chicken (page 54, Trim Healthy Mama Cookbook)

This is a yummy crock pot dinner. We like to eat this with a side of rice!

2. Deconstructed Fajitas (page 56, Trim Healthy Table)

Fajitas without the tortillas, we like to add all the toppings for ours and a side of brown rice!

3. Teriyaki Beef & Broccoli (page 82, Trim Healthy Table)

This can be made in the crockpot or Instant Pot. I’ve made it in the Instant Pot, and in a failed camping Instant Pot experience my mom made it on our Blackstone. It is so flavorful and really hits the spot when I’m craving asian food.

4. Chicken Sausage Gumbo (page 89, Trim Healthy Table)

Another yummy crockpot meal, this gumbo is so yummy and a great alternative to chili in our house. Josh is sensitive to beans so we try to avoid those, which unfortunately means avoiding chili.

5. Taco Pie (page 119, Trim Healthy Table)

I loved eating my Taco Pie with a baked potato. That might be my favorite thing about this cookbook, they tell you what sides to make with the main dish. I find that very helpful since I’m still fairly new in the kitchen.

6. Dreamy Chicken Lazone (page 50, Trim Healthy Table)

This is another dinner that is really good with potatoes!

7. Crockpot Buffalo Chicken (page 92, Trim Healthy Table)

Okay, this on Hawaiian Sweet Rolls….SO GOOD! It’s also super easy to make, just throw the chicken, hot sauce and other seasonings in the crockpot, let it cook all day and then dinner is ready in no time!

8. Nacho Night

Nacho Night is so easy! Just cook up some ground beef or turkey and add taco seasoning. Buy some white cheese dip, salsa, tortillas chips and any other nacho toppings you like. Then let everyone build their own nacho plate!

9. Brinner

We love breakfast for dinner! It just always hits the spot! Our breakfast for dinner includes pancakes, bacon, hashbrowns, strawberries and bananas. I like to enjoy mine with a glass of milk too! It’s not the healthiest dinner but sometimes you just need something yummy to eat.

10. Pot Roast

This was a dinner we loved last fall and winter, we got hooked on it when we lived with my parents. It’s so easy to make. You really just have to throw your meat, potatoes, carrots and onions in the crockpot with some pot roast seasoning. The seasoning packets at the store usually have a little recipe on the back that will help you if you’ve never done it before. I turn the crockpot on in the morning and let it slow cook until dinner time. So perfect on a cold, snowy day.

11. Burgers & French Fries

We just buy patties and fries at the store and cook them up! Super easy and always yummy!

12. Homemade Pizza

So for homemade pizza I like to make my dough using this recipe. It’s super easy to make and this is the recipe I made the night I went into labor with Brooklyn. We usually double it to either make double the pizza if we’re hungry or to make pizza night easy the next time by having some frozen dough already prepared. This recipe provides lots of tips on how to make your pizza super yummy!

13. Spaghetti & Meatballs

Another easy dinner idea! Just cook the noodles and the meatballs with the sauce and voila! Dinner is served.

One of Josh’s grandmas makes a great vegetable soup that our little family loves. I haven’t made it myself yet but she explained it to me the other day and we’re going to try to make it this fall.

17. Tuscan Chicken (page 72, Trim Healthy Table)

I believe we had this with angel hair pasta, it hit the spot for italian food without being Spaghetti & Meatballs again.

18. Taste of Home Casserole (page 144, Trim Healthy Table)

Our friend, Kristen, has made this recipe a few times for us! Super delish, and even Brooklyn loves it!

19. Ranch Wraps & Chips

These have such a nostalgic taste for me because it’s a meal my mom makes a lot. We just buy the pre-cooked grilled chicken strips and warm them up on the stove. Then we put ranch dressing, cheddar cheese, and lettuce on a tortilla and add the chicken for a light yummy dinner. We always serve this with chips!

20. Brick Paninis & Grapes (page 223, Magnolia Table Vol. 2)

I want to be Joanna Gaines when I grow up. She is multi-talented and these paninis are one of them. We really loved these and made both the Margherita and Turkey and Roasted Red Pepper options. I even made homemade pesto. So good, the hardest part is getting all the “toppings” made.

I don’t know about you but I’m hungry now! I hope this list give you some good ideas for dinner, maybe you won’t use these exact recipes but maybe it will get you started on your meal planning!
